A new study presented at the European Congress on Obesity reveals that white bread can make people fat. The research, conducted by a team from the University of Navarra indicates that eating more than one serving a day of white bread increases one’s risk of becoming obese by 40 percent when compared to people who only eat one serving a week.
The research team, led by nutritional expert Professor Miguel Martinez-Gonzalez of the University of Navarra, Spain examined over 9,200 participants over an average period of five years. Eating habits and weight was monitored. They discovered that people who consumed both whole grain and white breads had no increased risk of weight gain. They also did not find any relationship between eating only whole grain bread and becoming overweight or obese.
Martinez-Gonzalez said that people looking to lose weight should choose whole grain over white breads. He reported: “The issue is that white bread is made with highly refined flour which is rapidly absorbed as sugar.”
He elaborated: “Essentially it is equivalent to a high consumption of sugar. The problem is similar to what we see with soft drinks, their sugars are rapidly transformed into fat an organism. A sensible recommendation would be to switch to wholegrain bread, especially for people who usually consume a lot of bread.”
Martinez-Gonzalez noted that this research does not prove a direct cause-and-effect relationship between eating white bread and weight gain and/or obesity there is a definite association. He concluded: “Consumption of white bread (of) two portions per day or more showed a significant direct association with the risk of becoming overweight or obese.”
